TRIPE is back on the menu in Barnsley, thanks to a butcher on the market.

Paul Bates, owner of Keith’s Quality Meats, took on the task of selling tripe after previous seller J and M Gosling decided not to move into the new market, which opened last weekend.

“I suppose I am the saviour of tripe in Barnsley Market,” said Paul, 47.

“It’s a new thing for me. The old seller wasn’t coming into the new market, and because it wasn’t coming in here I just got in touch with the supplier and asked if I could do it. There’s definitely a market for it here.”

Paul has taken on the supply, which comes from Newark-based G Fisher and Sons, and he received his first delivery on Tuesday.

“The tripe will be exactly the same quality as in the old market, they knew what they were doing.”
