Morrisons has turned its Barnsley store into a skills academy to keep traditional trades such as butchery, bakery and fishmongery.

 

As part of the academy, three butchers and two bakers have already completed apprenticeships at the store. Scott Kirk, 22, is the latest apprentice on the butcher's counter.

 

As part of his year long training programme to gain a qualification in butchery, he will shadow a master butcher as well as completing four, week-long intensive training courses at Birmingham College.

 

He will learn about the bone structure of different animals, how to trim the meat and how to make the products such as sausages and black pudding.

 

He will also take part in cookery classes so he understands how to prepare the meat and can advise customers.

 

Many supermarkets removed these trades in the 1980s and 1990s to save costs but Morrisons kept its butchers, bakers and fishmongers and has invested in counters at the Barnsley store to make sure much of the food in store is prepared each morning.
